With the Soccer World Cup over and everyone quietly sighing in relief, this great event has left us with fond memories! It was the perfect showcase for what South Africa can produce.
Our annual AGM was held in Namibia at the magnificent Onguma The Fort, which is located in the Onguma Game Reserve overlooking Etosha National Park. We enjoyed superb scenery and culinary cuisine to match it, here, dinners are served from a wooden deck overlooking the watering hole. While a full day was spent sharing ideas and experiences, we also enjoyed a game drive through Etosha National Park.
At the AGM, we sadly said goodbye to our outgoing chairlady Jaci van Heteren, thank you Jaci for your contribution to the Classics organisation over the past year. We would like to extend a warm welcome to our newly elected Chairlady, Jo Pope, who is an honorary member of Classics.
Indaba, Africa’s top Travel Show which took place in Durban was once again a resounding success with the Classics stand winning a Gold Award for their stand.
The Good Safari Guide Awards ceremony was held in Durban just before Indaba and we are very proud to announce that the following member camps won awards! Thank you to all for your valued support.

The alternative energy programme at Garonga is proving very fruitful after only a
couple of months in operation. Likewise, the “Grey Water” is recycled so cleanly
now that even the “Fussier of the Ellies” drink from the waterhole, this results
in an enormous water saving as water does not have to be pumped from the Borehole
any longer.

The Batis Birding Training took place at the Onguma Game Reserve from the 5th to the 15th July
2010. The aim is for guides to gain more confidence as they learn more about birds and be able
to entice bird enthusiasts. The Beginners Curriculum taught the guides how to use binoculars,
locate birds as well as being able to identify the various types of bird species and their social
behaviour. The advanced Curriculum covers Birds of Etosha and is based around birds found in
and around the Etosha National Park.

Tena Tena’s game viewing area is looking great. The cooler temperatures combined with the open nature
of the bush this time of year has made walking a highlight of this season. Because of the abundance of
leopards in the park, guests who stay three or more nights are well assured of spotting one of these
magnificent but shy creatures. In addition, two endemic species occupy the South Luangwa – Thorneycroft
giraffe found in the park’s central area and Cookson’s wildebeest generally confined to the north. In
addition to the walking safaris guests can avail themselves of game drives and night drives.

We are delighted to announce that The Sabyinyo Community Lodge Association (SACOLA) opened
two new villages of 20 houses each which they had built with revenue gained from Sabyinyo
Silverback Lodge for destitute members of the local community to live in. Gorilla news; the
Kwitonda Group, which has 3 males, has a new leader, Kighoma, helping to settle the group.
In the Pabios Group one of the males, 15 year old Rukundu left to form his own group and, on
the 29th, a new baby was seen for the first time, which is great news.

Zambezi doesn’t translate to ‘The Great River’ for nothing! Every year, six
countries hold their collective breath as the famously fickle floods rush down
to bestow both blessings and adversity. Victoria Falls puts on her party dress
while Sindabezi staff ready their battle dress! 2010 was always going to be a
little different. The NEW chalets were built with the Zambezi’s most mischievous
mood in mind and fortunately, no rooms were lost to the floods.

Classic Recipe
Spinach and Roast Onion Soup
Motswari Private Game Reserve (South Africa)
|
Ingredients:
6 Medium onions – cut into slices
3 x 500g packets spinach, chopped
3 x Medium potatoes – peeled and sliced
600ml Chicken stock
600ml Full cream milk
100ml Fresh cream
Salt and pepper
100g Butter
|
Method:
Boil spinach with half of the chicken stock cube.
1. Place the butter and onions into a medium heated oven and roast until the onions are
cooked through (this will take approx. 45 min)
2. Boil potatoes in a pot with the chicken stock and until soft
3. Add the chopped spinach to the potatoes and cook until wilted
4. Liquidize to create a smooth soup
5. Add milk and cream and check the seasoning, set aside a small amount of fresh cream
to use as a garnish
Or, make this recipe even more decedent by crumbling feta cheese over it before serving….
Serves 6
