It's hard to believe that after all the planning for Indaba, it has come and gone with the blink of an eye. Preparations are well under way for WTM from 9th to 12th November. Please visit us on Stand No AF4550.

This year, the Classics AGM was held at Jaci's Safari Lodge and what a spread they put on for us. We were treated to an early morning game drive, followed by a delicious breakfast, all in a relaxing environment that would tempt any stressed businessman looking for a break. Our AGM saw quite a lot of activity when we sadly said goodbye to our outgoing chairman Stefano Cheli, but with change, comes opportunity, and so we would like to extend a warm welcome to Jaci van Heteren of Jaci's Safari Lodge who was elected as Classics new Chairlady.

Change of guard at Mowani Mountain Camp
In March 2009, we welcomed , Jason Palmer and Helene van Wyk to our management team. Jason hails from Zimbabwe and Helene was born and bred in Namibia.
Their team consists of Injagu Upora who will manage the front office and Nadia Botha who joined the team in July 2009, who will oversee the Food and Beverage department.
We welcome them with enthusiasm and know that our guests at Mowani Mountain Camp will be well looked after.

Shoebills and Fishermen, side by side
Over the past several years Semliki has been renowned for it's shoebill sightings on Lake Albert. One little known fact is that 99% of shoebills sighted on our boat trips are outside the reserve on community owned land. Fishermen regularly pass the shoebills without disturbing them, but this was not always so. Shoebill sightings dwindled in 2004-2005 until conservation efforts reached fishing communities with education, health projects, and school supplies. Now the shoebill is no longer seen as a competitor but as a valued neighbour.

Three years ago, Mpofu a very large male lion fought Rogan off his territory at The Hide. Mpofu in his wisdom, managed to canvas the support of his three sons Jericho, Judah and Scaredy Cat, to protect his ground. These lions have provided from cubs to kills, amazing spectacles for our guests. Surprisingly, Mpofu allowed his sons to mate with lionesses coming into the area. Now, unrest in the monarchy meant Mpofu was severely beaten up by his sons. After being laid up injured for almost 2 weeks, he is making his way back. No-one expected him to survive but he has made a miraculous recovery.

Classic Recipe
Pan-Fried Kampango Fillet served with Braised Lentils
and Leeks
Pumulani (Lake Malawi, Malawi)

Ingredients:
4 Kampango Fillets (approx. 200g each)
1 cup seasoned flour
3 medium Leeks, chopped
1 cup Puy Lentils
2 sprigs of fresh thyme
4 medium carrots, julienned
2 tbsp. Butter
2 tbsp. Sugar
White Wine Sauce
1 Onion, Sliced
125ml White Wine Vinegar
750ml Single Cream
250ml Dry White Wine
Knob of cold butter
Lemon Thyme or Chives
Salt and Pepper

Method:
Cut the Kampango into approx. 8cm slices, toss the fillets in seasoned flour and leave to one side until ready to cook.
Lentils
To prepare the lentil mixture, boil the lentils in water until soft, not mushy (do not add salt to the water as it makes the lentils tough) Drain and put to one-side.
Cut the carrots into julienne slices and simmer until soft, then add the sugar and butter and let the carrots caramelise.
Chop the leeks and saute in butter until soft, add the drained cooked lentils and warm through, add the carrots, and a teaspoon of chopped thyme. Season the lentils with salt and pepper at this point.
White Wine Sauce
Place the onion, vinegar and wine into a pot and boil over a high heat until reduced to 2 tablespoons, sieve and return the liquid to the pot, add the cream. Whisk in the knob of butter, add the lemon and chives and season.
Pan Frying the Fish
To assemble, spoon a mound of lentils onto the centre of the plate, place one fillet of Kampong on top. Surround with the white wine sauce, and top with some of the caramelised carrots.
