Malawi
Pumulani is proud to be a member of the very exclusive Classic Safari Camps of Africa group. Situated on the southern shores of Lake Malawi, its 20 bed lodge is surrounded by a National Park and is secluded from the busy shore life. Motswari Private Game Reserve
Timbavati, South Africa
Previously known as Timbavati, the entire staff at Motswari feel like they've come home in being members of Classic Safari Camps of Africa again. Welcome back Motswari. This exclusive South African resort is still the original traditional nostalgic bush camp owned by the Geiger family since 1979. "We have done much to maintain this image as well as conform to the ideals of Fair Trade in Tourism in habitat management and community involvement" says Evelyn Millard. This and the 25km open boundary between their traversing and the Kruger National Park ensure a rich safari experience.
Tortilis
Bordering Amboseli National Park, Kenya
Christmas and New Year at the Tortilis Camp were celebrated in many ways - lions on the Tortilis Concession brought in 4 new cubs and they celebrated the early return of zebra and gnus. The famous Amboseli elephants streamed back into the Park, bearing with them many a lively batch of tiny calves while Mt Kilimanjaro proudly beamed over the Camp in full view. On Christmas eve, guests celebrated with the traditional Maasai chanting, jumping and stomping by the local Moran. New Year's eve was celebrated with a special wine-tasting sundowner atop Kitirua Hill while their guests gazed at the final magnificent African sunset..."
Tena Tena

Luangwa Valley, Zambia

Tena Tena remains one of Africa's iconic camps. For over twenty years Robin and Jo Pope have been operating this discrete, understated, tented camp in the South Luangwa. Their focus has always been on the guiding, the high standard of service and the friendly welcoming atmosphere. And so it remains. As competitive pressure increases to build villa sized tents filled with hotel room luxuries, the Popes have kept Tena Tena true to the original safari traditions.

The onset of the summer months has brought with it some very welcoming rain. The good soaking has completely transformed the barren landscape into a thriving bushveld mosaic!

With the culmination of determination and passion, and at the best of times, true grit, from all the staff, 2008 was terrific and they would like to build on that in 2009. "You can wipe the dust of Africa from your boots, but never from your heart".

Jaci's Safari Lodge Madikwe, South Africa

Nocturnal visitor and biltong thief!

During the night Jan heard a knocking at the patio door of our house, when he went to have a look he saw a streak of white scuttling off. Opening the door to investigate, he found a honey badger - using threatening growls, the badger and Jan ascertained their individual escape routes - happy to report there was no clash between them and Jan now knows who found his biltong stock!

Classic Recipe

Whole Baked Tilapia

Semliki Safari Lodge (Toro- Semliki Wildlife Reserve, Uganda)

Whole baked fish in a mellow, African/Indian sauce served with roasted root vegetables.
Ingredients:
1 medium whole Tilapia, scaled and cleaned
1 medium red onion, finely sliced
half tsp grated garlic
half tsp grated ginger
Bay leaf
Coarse salt and black pepper
Peanut oil
half tsp leaf Masala
Smoked banana leaf for wrapping
Roasted root vegetables
Odii sauce
(Odii is a paste of pounded sim sim and g nuts, typically found in the North of Uganda, thinned out with a little lemon juice, sweetened and spiced up a little. It makes a wonderful accompaniment to freshly caught fish)

Method:
- Rinse the fish well under running water ensuring the body cavity is thoroughly cleaned.
- Score the skin diagonally and place on a banana leaf.
- Rub with a little leaf Masala and coarse salt.
- Drizzle with a little peanut oil.
- Fill the cavity of the fish with garlic, onion, ginger, bay leaf and Masala mix, scatter a little of this mix onto the banana leaf.
- Carefully wrap the fish in the smoked banana leaf.
- Grill the fish parcels over hot coals and finish off in the oven.
- Once tender, carefully open the banana leaf and brown under the grill.

To Serve:
Serve the fish whole accompanied by roasted root vegetables and a little Odii sauce.
