getting ready for WTM which is only weeks away
and ILTM following thereafter, we invite all our

We are proud to announce the addition of two new
members to our association: Pumulani (Malawi)

Chongwe River Camp is pleased to announce the opening of
Cassia Suite. A stand alone unit at the confluence of
the Chongwe and Zambezi Rivers, offering comfort and
luxury, ideal for guests requesting the exclusivity of a
suite and offering privacy and the quintessential
romantic setting for honeymooners. The custom – designed
octagonal tent & canvas covered bathroom with double
showers and claw foot bath adjoin a private pool next to
the river and a private dining area, perfect for
relaxing while viewing the confluence. |

The Hide Happenings - Our gorgeous Zimbabwean Spring has
sprung! Our lion prides seem to be in their element,
with the most amazing kills, the pheromones are out in
full glory too! What a treat it has been to have a
family of Rhino putting in an appearance at our pan. The
male even allowed himself to be photographed from our
platform. The elephant and buffalo numbers are
increasing, with a wondrous sight of 400 buffalo the
other evening. Cheetah have been spotted and performing
a kill for us. Plains game on the concession have been
numerous and varied lately, making for awesome game
viewing. Just a reminder that our annual photographic
competition is still on. |

Forget the US elections – it’s all happening in the
Mahale Mountains: Pimu, the current Alpha Male of the M
group has been using all his usual tactics to stay at
the top: aggressive physical displays, and lots of
vocalization. However, there has been plenty of
rumor-mongering amongst the ranks that the deposed Alpha
Male, Alofu, is on the verge of a comeback. Kalunde, the
45-year-old ‘gentleman’ of chimps, watches passively
from the background, albeit keeping a watchful eye on
the proceedings. There are 4 new babies in the group
this year which have delighted guests at Greystoke. |

Garonga

As food is the number 1 priority at Garonga, we have
decided to introduce “Theme Evenings”. So far we have
had a Kenyan night, Moroccan, and now finally a South
African Theme evening.
They are very popular with the Guests who also make an
effort to “Dress Up”. A Bottle of Champagne (Sparkling
Wine actually! Much Better!!) is given for the best
dressed!
Before the SA night began the Garonga Choir consisting
of the safari department attempted very badly to sing
the national Anthem! No tips that night! Anyway the
South African Theme Evening was a great success.
The menu for the evening was a Butternut Soup for
starter, followed by a choice of Bobotie or Boerowors
with Pap and a delicious Tomato and Onion Gravy mix.
Finishing the evening off with our traditional Milk
Tart.
We also now offer a Traditional Sunday Curry Lunch
copied from our Kenyan Brothers up North. Very popular! |

Classic Recipe
Scrumptious African Style Grilled
Kudu
Onguma Plains (Etosha
– Namibia)

African
Style Grilled Kudu, Served on top of roasted sweet
potato and a medley of stir fried vegetables Laced with
a port wine sauce and topped with roasted pear and fresh
rocket. |
Meat:
Only the best fillet will do - aged and trimmed and cut
into 220g portions.
Season with sea salt and course black pepper.
Grilled and sealed over hot coals, rare to medium-rare.
Vegetables:
A selection of the freshest seasonal vegetables, the
following going really well:
Peppers - red, green, yellow
Baby Marrow
Carrots
Leeks
Onions

All prepared stir-fry style and Al dante` Roasted sweet
potato and pears cut into finger length wedges, with a
sprinkle of salt & black pepper to taste, and olive oil.
Place the stir fried vegetables in the centre of the
plate, then position 2 fingers of sweet potato on top of
the vegetables.
Balance the Kudu on top of the sweet potato.
Sauce:
We use a game jus stock, brought to the boil in pan.
Add your favourite red wine, approximately 120ml and a
good port approximately 120ml
2 tablespoons butter, pinch of garlic, dash of thyme and
simmer to a smooth consistency.
Salt & pepper to taste, if required.
Drizzle the Kudu with the "hot off the fire" sauce,
garnish with pear & fresh rocket......AND SERVE !! |
