Last December saw the opening of Little Garonga,
Bernie’s latest offering at Garonga Safari
Camp, as well as the re-opening of
Benguerra Lodge after building and extensive
renovations following Cyclone Favio.
Celebrations as Chris and Juwayhir of Chongwe
River Camp tied the knot on 09 December, and
as Chongwe River House was named in Tatler’s 101
Best Hotels for 2008 list .
We also celebrate with members Nomad Tanzania
as their Nduara Loliondo camp won the Tatler
Travel Award for Discovery of the Year, and
Wolwedans as they made the Tatler 101 Best
Hotels in the World list (Best Family Hotel) -
for the second year in a row.
Sabyinyo Silverback Lodge, Rwanda, is now
a formal and very welcome member of Classics -
read about this very special lodge below.
Travel Trade friends, it was great to see old
and new faces at WTM and ILTM last year -
sincere thanks for your support. Classics are
again at ITB in March - Stand 113,
Hall 20.

Aris and Romi Grammaticas recently celebrated their 40th
Wedding Anniversary by inviting family and friends from
various parts of the world to join them for a week at
Governors’ Private Camp. In the 35 years Aris has been
operating in the Masai Mara he has NEVER enjoyed such
amazing and varied game drives. EVERY single day they
saw lion, leopards and cheetah’s hunting and most of the
time witnessed the actual kill, which included a Monitor
Lizzard being stalked and killed by a leopard.
Governors’ Private Camp continues to be popular for
clients wanting to enjoy their celebration in style,
surrounded just by family and friends, in the privacy of
their own luxurious tented safari camp. |

Benguerra Lodge reopened on the 1st of December, with 10
spectacular new Casitas, perfectly capturing the unique
style of barefoot luxury that guests had come to love
over the years. Each room is beautifully decorated in
warm East African / Arabic colours, with a comfortable
lounge and luxurious bathroom, complete with copper bath
and outdoor shower. The wide wooden deck with private
plunge pool and dining sala invites guests to indulge in
romantic starlit dinners. |

Guests staying in our Bush homes are able to experience
the more threatened game species by foot, vehicle or
from horseback. Our conservation projects include Sable
Antelope, White Rhino (current pop.10) and disease-free
Buffalo. Listed as Conservation Dependent, we started in
2001 with a core group of five Sable Antelope. Seven
years later we have a viable breeding herd of 26
animals. We have had a great success rate and are
expecting eight calves in February. |

Sabyinyo Silverback Lodge is situated on the edge of
Parc National des Volcans in Rwanda - the last wild
refuge of the magnificent Mountain Gorilla. The lodge
was built and is operated by Governors’ Camp but owned
by a community trust – Sacola, which uses rentals from
the lodge to drive socio-economic and conservation
initiatives in this fascinating corner of Africa. One of
the key partners in the building of the lodge was
African Wildlife Foundation. Viewing the Mountain
Gorilla in its natural habitat is perhaps one of the
most dramatic, thrilling and poignant wildlife
experiences on earth. |

Classic Recipe
Apple Strudel & Vanilla Sauce
Wolwedans Dunes Lodge
(Namibrand Nature Reserve -
Namibia)

Pastry:
250g flour
30g oil
125ml water
Butter
Filling:
5 apples
50g bread crumbs
100g shredded almonds
50g sugar
Ground cinnamon to taste
4ml rum
50g raisins |
Vanilla sauce:
½ litre of milk
50g sugar
Vanilla essence
8 egg yolks

Serves 5
Pastry:
Combine all the ingredients into a simple dough and let
it rest in the fridge for 1 hour.
Filling:
Peel the apples and slice them finely. Add all the
ingredients and set aside. If filling is too 'soft' then
add some more breadcrumbs.
Vanilla Sauce:
Heat up the milk with the sugar and vanilla essence and
set aside. Put the egg yolks in a metal bowl and add the
hot milk mixture. Beat over a hot water bath until
thick. Strain and set to one side to cool.
Roll the pastry into a 60cm x 60cm square and then
stretch with your hands until it is thin enough to read
a newspaper through. Brush generously with melted
butter, and sprinkle with brown sugar and breadcrumbs.
Spread the filling over the lower half of the pastry,
and roll it up. Brush again with melted butter and put
into a preheated oven (180°c) for 25 minutes or until
golden brown. To serve, sprinkle with icing sugar, slice into portions
and serve warm with Vanilla
Sauce. |

Meeting with the head chef and kitchen staff, Zara gave
them some deliciously illustrated books to gets some
inspiration for the new season. After a few days they
started to change and add to their favourite feasts.
Everyone was getting into the swing of the new menus,
but the kitchen got so carried away with the
illustrations, an added ingredient found it’s way into
the fruit salad one day. Well who said that black olives
and grapes aren’t the same thing? |
